Valentines Day dinner; the perfect gift

February 14th: Valentine's Day for many of us. For some, an excuse for shopping like crazy  and the time to celebrate love for others.

For those of you who are looking for a tender Valentine's Day gift, here is one that comes from the heart: a romantic Valentine's Day dinner. The chocolates box and the flowers, the Valentines Day Cards and ballons with the shape of a heart that says "Be my Valentine" are all just fine v-day presents.

But this is  more about love and care, about feelings and how to express them. Definitely, something that we buy has not the same deep meaning as something that we make. Something we put a bit of ourselves in. The time we spend doing things for others while thinking of them is the most precious gift we can share. And the one place to exercise this kind of unselfishness is the kitchen. To put some heart for this very romantic festivity, we have thought of Italy. What can be more evoking than an Italian Chicken Risotto? Think,  just the two of you and a candle on the table. A white lambrusco wine will put the cherry on top.

The risotto

1/2 package of long risotto rice (1 cup per person): Reccomended the Arborio or Carnaroli type.

2 fillets of chicken breast chopped

1 radicchio (sliced)

1/2 purple onion (cut in small chunks)

2 garlic cloves (sliced)

1/2 cup olive oil

1 glass dry white wine

5 cups chicken broth (double of the amnt. of rice and one spare cup)

3 tablespoon of parmesan cheese

salt and pepper

Optional: 1/2 carrot cut very tiny

The sauce

  • 3 tablespoons of butter
  • 4 tablespoons of gorgonzola cheese
  • 2 cups of whole milk



In a saucepan, cook  the garlic and the onion, add the radicchio and the chicken. Save appart when done.

Melt 2 tablespoons of butter in a pot and add the gorgonzola and the milk. Let it cook slowly for 10 minutes to make the sauce. Set aside but warm.

In a pot, over medium heat, warm the olive oil. Then add the rice. Stir until golden. Now, add the glass of wine and let it evaporate.

While stirring, add little by little the broth and keep stirring.

Bare in mind: keep it always hot and stir for about 20 minutes.


When the rice is soft, add the gorgonzola sauce, 1 tablespoon of butter and 3 tablespoons of parmesan cheese. Mix it all up and serve right away.
