Taco Casserole

1 onion cubed

17 oz. Ground chicken or shredded.

Taco seasoning mix

6 corn tortillas (split in pieces)

½ cup Sunflower oil

1 can of cooked black beans

1 cup of sour cream

1cup of Monterey Jack cheese

Taco Casserole


Pre-heat the oven to 375ºF (190 ºC)

In a saucepan, sauté the onion until golden. Add the meat and mix. When the chicken is almost cooked, add the seasoning. Mix with the black beans.

Pour it into a casserole dish and layer the split corn tortillas over it.

Make a layer of sour cream and top with tortillas and Monterey Jack cheese.

Cook in the oven for 40 minutes.

Serve with pico de gallo and guacamole on top for an awsome look.
