Ingredients

2.2 pounds (1kg) ground chicken meat

4 medium size zucchini (optional: eggplants)

1 cup of tomato sauce

2 small peeled tomatoes, natural or canned

4 slices of smoked bacon

1 egg

½ cup parmesan cheese

½ chopped onion

2 chopped garlic cloves

1 small red pepper

1 small leak

Salt , pepper, cilantro

2 tablespoons of olive oil

 Optional:

Change the bacon for Serrano ham or Iberic ham

Add a pinch or rosemary to the meat

1 bottle of romesco sauce or home made

  • Medium size pan
  • Oven tray or casserole

Directions

Preparation

  • Pick up the bacon slices and cut them down into small pieces and reserve.
  • Chop the onion, the pepper, the leak and the garlic.
  • Put the meat in a large dish and add the salt and spices. Add the egg and mix it all.
  • Split the zucchini into two halves and remove part of the veggie meat with a spoon to leave room for the chicken.
  • Set the temperature of the oven to 390ºF (180 ºC) and turn it on (grill function). Meanwhile…

Cooking

  • Add the oil to the pan and place it on the fire, medium heat.
  • When the oil is hot (but not smoky), add the vegetables with a pinch of salt. Stir.
  • When the onion is close to transparent add the meat and the bacon and stir once in a while.
  • When the meat is half cooked, add the tomato sauce and reserve.
  • Turn off the heat.
  • Place the courgettes over the oven try and fill them with the meat.
  • Spread the parmesan on top, at your taste.
  •  Put them in the oven and cook until the parmesan is golden brown.(7-10 minutes)


Serving

  • The romesco sauce is very much used in Catalonia (Spain). It is made out of tomatoes, garlic, bread, walnuts, almonds and dried red peppers. Rosemary, olive oil, vinegar, salt and pepper dress the sauce.
  • It goes really well with ingredients like zucchini or leak and it goes great with this dish. Try and serve it with some bread.

About this recipe

When we think of a ground chicken recipe, almost immediately a cloud of meatballs and hamburgers come to our minds. It is natural. Going a bit further, why not a chicken lasagna?

However, why can’t we innovate and serve it differently from what we are accustomed to?

Our humble zucchini works wonders with ground chicken.

In this recipe, we are going to use mixed ground chicken, I mean from different parts of the bird. The chest is always dryer than the thighs and the taste is slightly different, and this is a fact. For this, we will try to mix different parts, so it turns out moist and tasty.

Another ingredient that will improve the taste is the leak. It will bring up the flavors hidden and it is very healthy.

The tomato sauce is up to you to have it homemade, always recommended, or canned. Either way it will be just fine, you’ll see.
