Chicken Divan Casserole

CHICKEN DIVAN CASSEROLE RECIPE

Ingredients

For the gravy

1 brick of Pre-packaged velouté sauce, similar to béchamel only with water or broth instead of milk.

Or ingredients to home-made your own (DIY):

½ cup of oil or  butter

1 teaspoon of salt

½ teaspoon of pepper

3-4glasses of water or chicken broth

1  cup of all purpose flour

..........................................................

1 cup of mayonnaise sauce

½ lemon juice

Curry powder

12 broccoli florets

(It can be frozen broccoli florets. Defrost them in the microwave oven for 1 ½ minutes, until thawed)  

6-8 chicken breasts

For the topping

 

Parmesan cheese

1 cup of seasoned or plain    breadcrumbs

1 egg

Directions

Whisk the egg and set aside

In a medium-size bowl, mix the breadcrumbs with the parmesan cheese.

Pre-heat the oven to 375ºF (190 ºC)

The gravy:

Mix the heated velouté with the mayonnaise, the curry powder and the lemon juice

Home-made velouté

If your choice is the DIY velouté:

Over low heat, melt the butter and add the flour. Stir until it becomes even. Add the liquid little by little and whisk. When it is brought to a boil it’s done. Add the salt and pepper.

Coat the bottom of the casserole dish or a 2x9 inch. disposable aluminum baking casserole with butter and place some broccoli florets.

Alternate one layer of broccoli with a layer of breast fillets and cover all with the gravy.

Cover with the parmesan cheese- breadcrumbs preparation and coat the top with the egg.

Finally, leave the casserole in the oven to be baked for 30-40 minutes.
