1 chicken (joint in 16 pieces)

3 cups of oil for frying (best using olive oil)

8 garlic cloves

5 stems of fresh parsley  (1 tablespoon of dried parsley)



1 large-size frying pan

1 deep large dish

1 shallow dish for serving

5 sheets of kitchen paper

Preparing and cooking

  • First, chop 5 garlic cloves into tiny pieces and do the same with the parsley.
  • Mix the garlic and the parsley with ¼ cup oil in a large deep dish and introduce the chicken.
  • Make sure all the joints are evenly coated.
  • Pre-heat the oil in the pan up to about 356ºF (180ºC)
  • Carefully put the chicken joints, one by one, in the pan. Leave the pieces in the pan for 6 minutes, turn them over and leave them 2 more minutes.
  • They are ready when they are completely cooked inside, the juices are no longer pink when you test it with a fork. They’ll also look golden outside.
  • Display the kitchen paper sheets on the cutting board or over a shallow dish. Put the pieces over it when done. The paper will absorb the extra fat.

This dish goes great with french-fries and barbeque sauce, or  potato salad.

Healthy Combination

Serve it with a mix of different kinds of lettuce. You can also buy them in the supermarket already rinsed and mixed. A good time-saver tip.

Slice an apple like you do to cook potato chips. Fry it the same way in a pan or put it in a pre-heated oven (350ºF) over a shallow pan until they become crispy…what do you think?
