Presenting  these scary halloween recipes, because...... Halloween's back!

However,  we need to live on more than candy corn or candy bars and you need ideas on what to cook for a halloween party. We have prepared a solely chicken buffet. It is fun and easy to prepare. Pick up any dacoration from last year and make an arrangement for the table. Jack-o-lantern, a fellow used illuminate the way, can prefectly hold a bunch of ready-to pick wooden skewers with chicken nuggets.

 That vase you are keeping away, try and decorate it with bats, skulls or staring eyes and use it as a holder as well. Little skulls for the sauces and lots of black an orange all around. Also, we can do a bit of pumpkin craving and add it to our halloween table decorations. It is a good display for kids halloween crafts as well!

For our haunted house table arrangements, we have used a jack-o-lantern pumpkin to hold the colored chicken nuggets and a vase for the realistic chicken fingers. Three small orange and grey glasses make the base for the nightmare composition. And finally, we framed the scene  with a halloween tinsel with flying bats.

Of course this is just an idea. The important thing is to keep up the halloween spirit and match the scary halloween decorations.

This is the first of this year's Halloween recipes. When preparing this recipe, bear in mind that the cutters are meant for cookie dough so one important thing is that the breast fillets have to be really thin, otherwise, you are going to have to be very high skilled in using the kitchen knife to help cut the difficult parts.

We found this awsome set of food colors with the halloween palette. Just what we needed!

These are used for cupcakes and cakes but who says they can't be great for chicken too?


Use  plastic dishes for coloring. This way,  putting away things afterwards will be super-easy.

The recipe

Carefully cut the shape you decide and set appart.

Tip: the leftovers from the cuts can be used as chicken chunks for the chicken soup or for chicken fajitas.

Now you can either add colorant to the sesame or to the chicken and the add the sesame. Either way, use the gloves and the spoon to mix.



Heat the oil and fry

Tip: fry the clear colors first and end with the dark ones.



Finally,  skewer them one by one  and set them nicely in the jack-o-lantern

Recipe 2  Realistic spooky Chicken Fingers

Chicken breast fillets

Sesame seeds

Oil

Salt

Food colorant with halloween colors

Do you care for a bite? These are real chicken fingers! Spooky, isn't it? You will eat your fingers, guaranteed.

Well, these fingers are a realistic adding for your halloween chicken buffet . Very easy to create.

First you need to take the red and black food color


Then, cut the breast fillet into finger shapes

Use the sesame seeds to create the nails and taint the opposite edge with red  food color to create the sensation of blood.

Dare to eat your fingers in HalloweenTrick or treat...

We have been doing some pumpkin carving for the final dish, the star of the halloween recipes. The kids and I had a great time building "calabacin", as it has been named.

Halloween Chicken Casserole recipe

After so much fun we are going to prepare this delicious casserole.

We took the pumpkin pulp and chunks and removed the seeds. With very simple ingredients we just hit the nail.

You can try it too! Just follow these simple steps:

Ingredients

2 Whole chicken breasts cut in small cubes

2 cups of pumkin pulp or chunks

6 potatoes (3 peeled potatoes for each cup of pumpkin)

1 green pepper

1 red pepper

1/2 onion cubed

1 egg

salt, pepper, paprika, oil



Utensils

1 oven casserole

1 oven tray

1 oven foil

1 pot for the purée

1 pan

Stirring spoon

Blender


For the serving

You can be as creative as you want but we have used

  • cup cake cups
  • cookie cutters


This halloween casserole recipe is a two-in-one recipe. It makes the most traditional of all this year's halloween recipes. There is a chicken sautée mixed with a pumpkin purée.

Therefore, we need to prepare two dishes that will be joined toguether, in the end.

The way to get organized is to begin with the purée and to go back to the chicken while the first dish is marching.

The pumpmkin purée

Put the pulp of the pumpkin that we took from the pumpkin carving and the potatoes chopped and diced in a large pot. Cover it with water, add a pinch of salt and a drop of oil an let it boil for 25 minutes.

While it boils, begin with the chicken sautéeing.

Consider that we need a very thick purée so we will separate the ingredients from the liquid and use the blender to make the purée.

Once made, add to it paprika, parsley, salt and a spoon of oil. Stir and set aside.


Chicken sautéeing

It is very easy, you just put some oil in a pan and add the peppers and onion with a pinch of salt. The salt prevents the onion to burn and helps it get the transparent look.

Stir and add the chicken when the onion is soft.

Don't forget to add salt every time you incorporate a new ingredient.

Let's put it toguether

I'll show you three different ways of presenting this dish.

The first one, is a plain casserole like the ones we used to have at home. No fancy arrangements needed.

Serving as Traditional casserole

Lay the chicken at the bottom
Wisk the egg
Cover with the purée and paint the surface with the egg
Put it in the oven 420ºF, only for 5-10 minutes to grill the top

We can use inox rings like the ones used in restaurants for the fancy creations, or we can use the cookie cutters ring-shape.

In this case we have used three different sizes and the results are fantastic.

Display the oven foil and set the rings.

Put the chicken first, cover with the pumpkin purée and add a pinch of paprika on top if you like.

And put them all in the oven for 5 minutes with just the grill on

I love to accompany any of these halloween recipes with an avocado salad.

Just fresh spinach baby-leaves, sesame seeds and extra virgin olive oil
